Healthy Breakfast Burrito Recipe

Being able to work from home, among many other things means that I have enough time to properly meal prep and cook more at home. If you have been around for quite some time now, you will definitely know that cooking is not my biggest strength but I do try and experiment with new recipes every now and then. Sometimes they work, sometimes I fail miserably. But the thought counts, am I right?

Recently, I’ve been trying to change a bit my breakfast menu. My all-time go-to breakfast has always been a good bowl of yoghurt plus my favorite oats and a banana. However, I was getting a bit tired of having this almost every day so I wanted to try out something new that was as healthy and as delicious as my usual breakfast choice. In addition, I really did not want to spend much time preparing it – mornings are usually my most productive part of the day so I want to maximize this time as much as possible.

So, I searched the Internet and found a super easy recipe for a healthy breakfast burrito. It had everything that I was looking for – it was quick and easy, the ingredients were things that I almost always have in my refrigerator, and most importantly, it was extremely delicious. So if you are looking for a breakfast alternative, here is the recipe!

  • 1 tortilla
  • 1 egg
  • Spinach
  • Cherry tomatoes
Directions
  • Step 1 To make a breakfast burrito the first thing you do is prepare the eggs in a pan. I usually scramble them directly in the pan, without overcooking.
  • Step 2 When the eggs are ready, I move them to the tortilla, add the spinach and cherry tomatoes on top. The cherry tomatoes give the necessary moist to the burrito but if this is not enough for you, you can always add cream cheese or tomato paste mixture over the tortilla.
  • Step 3 Finally, it’s time to wrap. And then the mystery of wrapping a burrito starts. I follow the infamous TikTok tortilla wrap hack – first, I cut a slit in the tortilla from the bottom to the center. Then, add a different ingredient to each of the four quarters of your tortilla. And finally, the fun part, the folding: starting with the cut edge, fold the tortilla into four quarters. Here is a video where you can see the whole process.
